You can use software like AppogeeHR to set up vacation emails that will automatically turn on when you go away for approved leave. You can also create templates of emails to share with your team with a tool like Right Inbox.

I’ve run into the “no voicemail” thing at a few businesses where phone was the main mode of contact too, and it was hugely frustrating. I have followed these steps on my work iPhone. I have driving mode set to manual and to apply to “allow calls from no one”. DND is on manual and I have turned on driving mode (which automatically turns on DND) in the Control Center. But when I send a test message from my Samsung personal phone, I am not getting the auto-reply.
