The auto-reply only replies ONCE to each email account, the first time they send. If someone sends you multiple messages, they will not get multiple replies back. This is a useful feature because it prevents your account from flooding a mailing list with replies or from filling your email inbox with automatic rejections from "do not reply" accounts.
Changing it every evening is definitely too much, though. I would assume the vast majority of people sending business email understand the concept of working and non-working hours…

With a slightly modified email address to mirror yours, they can easily impersonate you using the personal information provided in the OOO message and exploit your absence. Get the time and date right for when the automatic emails start - you could choose the the moment that you actually leave the office, or some cheeky people choose an hour or two before they leave, saying that they are busy handing over or wrapping up to deal with customers or other colleagues. They are still able to check the emails they do get anyway, to reply properly to if they want to.
