An out of office message is a compact text that conveys the most important facts: How long you’ll be unreachable, when your contacts can expect an answer, (optionally) the reason for the absence, and, if necessary, a personal note. A referral to another email address, e.g. to one of your colleagues, is often helpful or even necessary.
I do that for most cases. Occasionally I’ll change it to “I’m out of the country and will not have phone or email access.”

It auto-generates an OOO response with either a link or a quote pulled from Wikipedia. Rather than sounding like a boring email robot, you could add a funny tone to your letter. Use a GIF or a meme to joke about what you’re doing on vacation, but remember not to go overboard.
My pet peeves are too much personal information (no need to tell me your cousin had a hysterectomy) and the ones that are carbon dated, e.g. from 2018.
