So, here are seven various templates you can use. Feel free to copy and paste them, but it is highly encouraged to add something of yourself into these templates (I mean, tweak them according to your personality).
I am on annual leave until dd/mm/yyyy. I will allow each sender one email and if you send me multiple emails, I will randomly delete your emails until there is only one remaining. Choose wisely. Please note that you have already sent me one email.

You can show just how thrilled you are about your vacation while still providing an apology (of sorts... not really).
I am currently in London. My Inbox didn’t join me on this trip, so I’ll be sure to answer your msg as soon as I return back on Wednesday, MARCH XX, 2XXX.
Not to mention, there are all sorts of oddball situations where you might wish you gave another option. No chance that a call from a big client, the CEO, or a supplier might get routed there? Not to mention enforcement agencies that are often “we sent the required notice to the contact info I was given” before they issue a citation or pull a license or tow the company van.
To make sure your email doesn’t get lost in a sea of messages please resend it on September 20th. If your message is urgent you can contact [contact’s name] on [contact’s email].
I think humor is fine (the hard-to-misunderstand kind), but definitely less than 100 words of it. “I’m out of the office returning Thursday June 10th. Please contact (shared mailbox email address) for support or call (person name) if the matter is urgent.”

The reason I did it was that the first time I took maternity leave, I came back to thousands of irrelevant emails. It was a chore to sort through them, and finding the ones that were still relevant was like finding a needle in a haystack. 4. Respond to Urgent Emails Only. If you’re taking a few days off and want to respond only to urgent emails, this template would be a great fit. Hi (specify the Name field id),
You can then come up with a subject and write your text, explaining that you are out of office or unavailable.
This is true! The nuclear option also helps the recently returned vacationer understand what is a priority and what isn’t. But, as boyd wrote, “if you just turn off your email with no warning, you're bound to piss off your friends, family, colleagues, and clients.” The blog post offers some helpful steps to make a clean break feasible — they include communicating with colleagues about the sabbatical long in advance, managing expectations of those who rely on you, creating a backdoor for true emergencies, and then, right before going away, reminding everyone about the sabbatical once again.
While I won’t be quite as far as the North Pole, I will still be completely disconnected from my inbox until my return. So, if you require immediate assistance, please send your email to [contact name] at [contact email].

I feel like this is the only reason to do this, otherwise its just a big piss off.
