A standard OOO responder email simply needs to inform the sender that you are out of the office and when to expect a response. Like this: Hi there, Thank you for your email. I am currently out of the office until [date] and will have limited access to my email. If you require immediate assistance for any urgent matters, please contact [name] at [email] or [phone] in my absence. Best,

It is important to understand that your auto-response message can go to anybody, even your top management people. Try to avoid any embarrassment by taking the time to proofread the message.
I can’t remember if this was just an outgoing voice message before routing you to an individual, or for a voicemail, but I remember a fun December phone message from a small company (I think an insurance agency) sung to the tune of a Christmas carol–something like Jingle Bells. The content was something like: you’ve reached our office during this holiday season, hope your holidays are happy, please 1) leave a message or 2) press X for who you want. Other than the tune, it wasn’t overly holiday-centric (for those who don’t celebrate the holidays) and it was cute.
Don’t forget all our offices will be closed for the Public Holidays this Thursday date. [Company name] will be closed to celebrate [Holiday name] and we will resume normal operation on [date]
Out-Of-Office templates (OOO) are a type of auto-responder that instruct eDesk to reply automatically to messages that arrive during one-off office closures, e.g., during a national holiday. For example, a customer sends your company a message on Christmas Day, but the office closed at 6pm on Christmas Eve and will not reopen until the 29th December. If you have set up an OOO template for this holiday period, eDesk will immediately respond to the customer with a message that reads : "Thanks for contacting Joe's Bikes! Just to confirm that we've received your message and that a member of our team will respond as soon as possible. Wishing you a very Happy Holiday from everybody at Joe's Bikes". This message is pre-written as an OOO template and is set up to be triggered for any customer messages that arrive between 6pm on 24th December and 8am on 29th December. Hahaha. This sounds like somebody thought the phrase “at X’s earliest convenience” sounded vaguely businessy and professional, but didn’t realize the pronoun is always supposed to be “your”. It’s never “my”, for the reason you mentioned.
I feel like this is the only reason to do this, otherwise its just a big piss off.
I worked with a guy years ago who would update his voicemail greeting literally every time he left the office.

While I hypothetically could reach my email, while I hypothetically do have my phone on hand, and while I hypothetically do have access to WiFi, I’d rather enjoy time with my family.
