Something like, “I will not have access to email while I am out and will get back to you when I return. If your issue is urgent, please resend your email after X date,” would be… more polite, I guess.
This is the standard reply I’m my org. Occasionally there is something about not being able to check emails while away (or being able to) but that’s about it.
Now the last part is to bring up the DND mode to the Control Center, where you can turn on the DND mode to make your iPhone respond to calls and messages with an automated vacation message that you set.

A standard OOO responder email simply needs to inform the sender that you are out of the office and when to expect a response. Like this: Hi there, Thank you for your email. Figured it out: only works when set in driving mode, and driving mode works if you are actually driving or not 🙂 Until then, this will work until they come up with a better solution. Thank you!!
An out of office email is an automatic response you can set up to be sent when someone tries to get in touch with you whilst you’re away from the office.

That really does feel excessive. I think most people are savvy enough to think, ‘Huh, it’s late in the day for pretzelgirl, I might not get a response until tomorrow. Business as usual.’ Being out of communication for a day – travel, meetings, days off – doesn’t require an out of the office alert, either, just a response as soon as possible.
So that we can all spend valuable time with our families, this Thanksgiving and the following Friday will be paid holidays for all employees. Enjoy the long weekend!
