If you don’t clearly state the dates on which you will be disconnected from work, your office co-workers and clients will most likely send you multiple emails, clogging your inbox. That will make it quite difficult for you to catch up when you get back. Also, if you don’t include the name and contact information in your outgoing message for the co-workers who can help in your absence, your well-deserved and pleasant vacation time could get in the way of specific projects in the company.
For immediate assistance, please contact my colleague [contact name] on [contact email/phone number] who should be able to help. Otherwise, I will respond to your email as soon as possible upon my return.

So many people emailed Ryan that Aviation Gin's servers crashed. Here's his July 2018 out of office message:
Hello, Thanks for reaching out to me. Unfortunately, I’m out of the office from [DATE] to [DATE] with limited / no access to email. If your query can wait, I’ll be responding to the emails I missed when I return on [DATE]. If not, contact [NAME] at [EMAIL] or [PHONE] and he/she will take care of you.
Start with a friendly greeting. Skip the "Greetings," "Salutations," "Dear sir/madam." These are far too stuffy and robotic. Instead, start off your response with a simple "Hi" or Hello.
Hello, you have reached [Company Name]. To continue in English, press 1, for Spanish, press 2. (Wait for customer to enter an option.) You’ve reached the main menu. To reach a staff member by name, please press 1. For sales inquiries, press 2. For technical support, press 3. To place a purchase order, press 4. For accounting, press 5. Ugh, I wouldn’t mind changing daily if I could have a couple of prepared responses for normal circumstances (i.e.: “I’ve left for the day, but I’ll be back in the office tomorrow morning to return your call”) to select from, but having to create a new message for Tuesday night when the info for Monday night is the same? Rage inducing. Email is asynchronous, you KNOW you’re not going to get an instant reply and sometimes you email knowing fully well that it won’t be seen until the next morning/week/whatever. Why on earth mandate an auto-reply for that?
You can’t do that when students are emailing (well, you can, but you shouldn’t). Our office requirement is “within 48 hours during regular business hours.”
