I guess to start with what I think you get right, there's no need to apologize for being out of office, and no one should feel obligated to deal with anything other than a legitimate emergency (which are, in most fields, truly rare) while on vacation or while taking time off.

Front makes it easy to save vacation responders and turn them on and off. If you're not on Front (yet!) here's how to save one in Gmail or Outlook. Then just copy your message into your vacation responder, rest assured your emails will get a response, and hit that glorious "Sign out" button.
I think this is great. A little too long, but it would work well as an internal reply in a large office with the right kinda culture. I’m imagining how useful it would be in my previous office with 300+ people that always had some “fire” or another to put out. I also appreciate how it protects the sender’s time off–at no point does it say “ok, fine. contact me.”
I’ve started going really, really simple on OOO messages – literally just “I’ll be out of the office until ___, please contact ___ for questions about ____”
Write a short, direct subject line.State your purpose for writing.Include the dates you're requesting.Consider mentioning why you're taking time off.Discuss how you're preparing for time off.Remain available for questions.
The email I send out always says something along the lines of “I’ll be away Thursday and Friday, so if you need anything from me, please let me know before noon on Wednesday. Thanks!”

Everything’s a little off-kilter as we continue to contend with the COVID-19 pandemic. It’s hard to step away from work when the “office” is the dining room table you can see from your couch. It feels a little strange to take PTO when travel and boisterous family gatherings seem like a distant memory. You might be working odd hours so you can juggle childcare and other responsibilities.
