Thank you for your message. I will be out of the office starting [start date] and returning [return date]. While I am [reason for absence], I will have limited email access.
Of course, you can change the wording to suit your style but don't spend too much time fluffing about. The idea is a short and simple message. I didn’t watch the video, but reading the transcript I got the vibe that the author is one of those people that thinks they are a lot more clever than everyone else does.

2. Out of office sick leave template. You don’t need to tell the sender too much, but it is important to say you won’t be available. If it is a long-term illness, you might not have a date set for your return.

I have followed these steps on my work iPhone. I have driving mode set to manual and to apply to “allow calls from no one”. DND is on manual and I have turned on driving mode (which automatically turns on DND) in the Control Center. Thanks for your email. I’m on vacation. On the couch. Eating chips. And bingeing Stranger Things for the eighth time (don’t tell anyone).
So what makes a good automated response that will give you the reassurance you need to keep your work email under control so that you can truly enjoy your holiday?
I say I’m off-duty, or in non-working status, but I come from a DOD background. I no longer like to say out of the office. Unavailable is good too.
That said, be careful with messages that are this curt. Make sure you're familiar enough with your audience — and your boss, for that matter — to know that this sort of out-of-office message will be met with a snicker, and not with annoyance.
