I dislike it, too. But I add it, because we have managers who do check their email on days off & respond. That’s above my pay grade as far as I’m concerned, but I don’t want people to think that I might be checking.
We had someone at my old job whose auto-reply stated that they were at a “White Privilege Conference”. Granted, the conference was about dismantling White Privilege, but to someone outside our work who didn’t know that, I imagine that got quite the reaction!

This is how my voicemails to my doctor’s office, my son’s doctor’s office, his daycare, etc. all go. Actually, the few times I leave voicemails beyond that, this is how they go.
I’ll be out of the office on vacation for the next week. I will probably see your message because I don’t know how to relax and will likely respond if I feel that I need to help in any way. Otherwise, I’ll get back to you when I return. Thanks! If you don’t feel like adding to my workload, please contact [name] at [email] or [phone] in the meantime.
I will be out of the office starting (Starting Date) through (End Date) returning(Date of Return). If you need immediate assistance during my absence, please contact (Contacts Name) at (Contacts Email Address). Otherwise I will respond to your emails as soon as possible upon my return. How do you write a school holiday notice? Mention that not availing a break for a holiday has taken a toll on your child's performance. Mention that you have planned a holiday to spend time and enjoy with your child. Mention dates for a holiday and asks permission for leave. End by thanking in anticipation.

That said, I promised my wife that I am going to try to disconnect, get away and enjoy our vacation as much as possible. So, I’m going to experiment with something new. I’m going to leave the decision in your hands:

I, for one, tend to forget to set my automated out-of-office (OOO) email responder and scramble to do it before the plane takes off 🙈 It’s important to inform your customers and business associates (and remind your colleagues!) that you’re away, especially if they’re expecting a prompt response.
My office has a shared vacation calendar, which I think is a more helpful way to handle this.
The subject line. This is the very first thing your customer will see, before they even open your email. The opener. The first line is what greets the customer as soon as they open your email. The “thank you” The body. The email signature.
