I’d add a little more detail to your message just to make it clear what will happen in your inbox. “If I don’t hear otherwise, I’ll assume that your issue was handled by my colleague” or “Please cc me if you contact Jane, and I’ll check back in on my return if I think your issue is still open.”
Season’s Greetings! It’s my favorite time of year, which means I’m currently out of the office chugging mugs of cocoa, stuffing my face with cookies, and attempting to fulfill my life-long goal of memorizing every single line of [FAVORITE HOLIDAY MOVIE]. If you need immediate assistance, please send an email to [NAME] at [EMAIL] so that the other elves in this workshop can help you out. Happy ho-ho-holidays!

It is not appropriate to say in the message that you will get back on the day you return from your vacation. You may have a lot of work to take care of on your first day after getting back; you don’t want to promise something you won’t be able to fulfil.
Then, all that’s left to do is turn it on before you abandon your desk, and get prepared for a relaxing holiday break—without feeling the need to be constantly tethered to your inbox.
Note that the poaching email does not have any other contact details other than the leaver's - this is to try and funnel all enquiries to the leaver as part of the poaching plan! More tips here.
We had someone at my old job whose auto-reply stated that they were at a “White Privilege Conference”. Granted, the conference was about dismantling White Privilege, but to someone outside our work who didn’t know that, I imagine that got quite the reaction!
Because I used to get phone calls that defaulted to, “I need the director”, I had my out of office mail set to:

Once I got an auto reply from a stakeholder on a project that said something to the effect of “Thanks for contacting me. Due to the large volume of email I receive, I don’t read them all. If I haven’t responded within 3 business days, please try again.”

Yes, I phoned a dentist office late in the day for a reinfected root canal problem and got a cutsy “humphrey bogart” fake reply on their voicemail — I thought it was extremely inappropriate for a business office to use something like this. Never?) nor did they offer any options for emergency contact with another dentist.
