Setting up an effective out-of-office autoresponder may seem to be a simple task. However, there is nothing worse than receiving an automated response that is not clear or useful. You want your “out of office” message to provide useful information and clarify why you are not available now. You certainly want to avoid any confusion or frustration.
My European colleagues get an extended summer holiday all at the same time, which means we get OOO notes like this:

Is your email urgent? If so, you should probably call [Name] at [phone number], and they will assist you. They aren’t in the sunshine – they’re still at work.

I think I started following that Tiktok account after this video and, if I recall correctly, the OOO writer is an SVP who is trying to reset a company culture that has very little work/life balance. I always liked it, but that background info made me love it that much more.

No need to go into great detail that you're traveling to seven different European countries. Simply state whether you're on vacation, at a conference, or on a business trip. This will give the sender a general idea of whether you're be checking your email while you're out. "I'm currently on vacation/at a conference/on a business trip."
The plan B is to send it again when they’re back though. I think there are a lot of situations where I emailed them and someone else from the start and someone else answered, or I found someone else in the 2 months span until they’re back, or did it myself, or it’s too late to help…. So it does help them avoid following up on things that don’t need following up on.

If it’s not important and you’re just a little bit bored then you can amuse yourself with these fun facts until I return. When hippos are upset, their sweat turns red. My trick though is to leave the out of office on for the first day after I return so folks know to expect delays while I get caught up/triage my inbox. Works for my company.
But I will be taking periodic breaks from eating, binge-watching, and probably from cooking, too, to check my email [once per day/every evening/occasionally] while I’m away.
Thank you for getting in touch! I’ll be out-of-office from [date] to [date] and will not be checking email during that time.
