If you’re anything like I am, you probably fall into team two. That doesn’t leave a lot of time to get creative. But if you plan ahead, you might be able to craft some hilarity.
Happy Holidays is used only around Christmas in the USA. Traditionally, it was meant to include both Christmas and New Year's Day. We don't usually say "Happy Holiday" at other times, although there's nothing wrong with saying it.

My favorite thing is setting my OOO to only run for a specific amount of time. I will absolutely forget to turn it off if I have to do it manually, but we can just set a date/time range for it to start/stop. So I usually start it around 4 pm the day before and end it at 7 or 8pm the night before I return.
Apologies, but I am currently knee deep in sushi and shrines on the other side of the world in Japan. I will be back to the usual tea and crumpets when I return to the office on [DAY OF WEEK], [DATE]. If you have an urgent query about [BUSINESS] before then, please don’t hesitate to contact [NAME] in my absence. [EMAIL]. Thanks so much.

So what makes a good automated response that will give you the reassurance you need to keep your work email under control so that you can truly enjoy your holiday?
Even if it’s for a short amount of time, an autoresponder helps you enjoy your time off from work.
The key to a good note is to let the person feel that you are really thinking of them. A good note keys into the person it's being sent to and reflects a special connection. On the other hand, you can get more interesting or playful with subject lines such as:
When we have people go on maternity leave we normally arrange with them for mail to be forwarded directly to the person covering their leave, (but I’m in the UK so normally they will be out for 6-12 months)
It doesn’t matter whether you’re going to be out of the office for a few days, or a few months – if you’re going on vacation, it’s critical to remember to set up your out-of-office autoresponder.

That’s my practice, too, though I only use it for times I’ll be out for a day or more. Some of the work I do and support can be very time sensitive and it’s really the most efficient use of *everyone’s* time if I spend two minutes before I leave setting up OOO so that they are quickly directed to the right person instead of having to go check my calendar, see I’m out for a week, try to remember who it is that’s my backup, etc.
