It usually isn’t enough to just say you’re out and won’t be responding to messages. You’ve got to give people options for how they can get their issue or request resolved. One of the easiest wins here is to provide alternative contact information. That could mean providing your mobile number while you’re out, or, more commonly, providing the phone number and email of the colleague (or department) that will be covering while you’re away.

We were playing a family game once everyone was vaccinated, and a thing came up about “people who reply to a text message with a phone call” and my daughter and niece turned and glared at me…

The auto-reply only replies ONCE to each email account, the first time they send. If someone sends you multiple messages, they will not get multiple replies back. This is a useful feature because it prevents your account from flooding a mailing list with replies or from filling your email inbox with automatic rejections from "do not reply" accounts.
Happy holidays, and thanks for your email! I’m taking a few days off to spend time with my family and friends so I won’t be answering emails as quickly as usual. Huge pet peeve – several of my coworkers still have COVID-related out of office notifications. I didn’t find them necessary in the first place, since everyone was still working from home and should have been checking emails normally, but it’s especially weird now that we’re officially back in the office a couple of days a week. It feels like they’re making a preemptive excuse for responding slowly. I’m surprised management hasn’t said something, honestly.
Just hang in there, the holiday break is near. Alas! You can finally disconnect, recharge, and relax.
To my mind, it’s just a really bad idea to mass delete stuff that comes in while you’re out. You never know if those emails contain important (though non-actionable) information that you’ll need. You really can’t expect people to resend information like that once you’re back, especially if you were cc’d on something.
