If you’re looking for a classic OOO message, this one is for you. Perhaps you work an industry that values directness and getting straight to the point, and playfulness may be off-brand. This response covers all of the most important bits of information every OOO needs: the date you will return to the office, when they can expect a response back, and who to contact in the meantime. Maybe I'm over-reading your advice or observations here, but, like, being straightforward and honest without being deliberately blunt or getting in your bon mots is basically the expectation at most of the companies I've worked at. Professional politeness is fine, and good, actually, as long as it's not a cover for other, less praiseworthy behaviors, and what constitutes "important" is going to vary wildly, depending on whose boss is the one assigning the tasks — my boss may not care that an employee's access to a system gets delayed by a week or two, but the employee whose sales are dependent on having access to that system certainly does, for entirely understandable reasons. Duh. We're in the travel industry. Of course, an out of office message involving dolphin-speak would be at the top of our list! Who doesn't love a dolphin?
There’s a grim, apologetic vibe to these messages — I’m sorry I’m taking time for myself but I’ll try to check in on occasion! They’re a vivid reflection of a work culture that valorizes constant productivity and the near-total overlap of work and life. But they’re also do a terrible job of what they’re intended to do, e.g., set realistic expectations for both sender and recipient. A vague OOO message traps both parties in an uncomfortable liminal space where both productivity and rest go to die. The original sender is left unsure if they’ll be getting a timely response or a whether the email will go ignored for a time or forever. The original recipient has taken what is a rock solid excuse (time off) and cheapened it, offering a backdoor for email guilt to creep in.
I’m with you. It comes across as a bit scold-y, like chastising someone for emailing while you’re out and treating them as if their issues aren’t important.

No need to go into great detail that you're traveling to seven different European countries. Simply state whether you're on vacation, at a conference, or on a business trip. This will give the sender a general idea of whether you're be checking your email while you're out. "I'm currently on vacation/at a conference/on a business trip."
