I don’t think it’s rude to do the deletion, but it’s pretty rude to not give some sort of Plan B besides “Wait until I decide I am ready to deal with you.” I’m sure it feels lovely to set up if you’ve usually got a lot of annoying people clamoring for your time on matters that aren’t nearly as urgent as they think, but to not even offer a “in case this is urgent, contact X” fig leaf just shows you don’t care.

My colleague [name] has agreed to respond on my behalf, so feel free to forward the message to [phone] if it is urgent. You can otherwise expect a response from me once I return. Thanks for understanding.”
An out of office message is basically a quality of life feature both for you and your business contacts. By warning your clients that you won’t be able to reply to their message right away you save the time they might have wasted on follow ups. You also won’t lose prospects who might’ve believed that you’re ignoring their request otherwise.
