My employer uses Outlook and it has an option to display all OOO messages when you add the person into the To/CC/BCC fields of an email, prior to sending it. It’s pretty great and actually saves an email sometimes because I can see who I should contact and just go to them.
Sorry, you missed me. I’ll be away from the office until [date]. As my inbox didn’t join me on this trip, I will only be responding to emails only when I return. That will be on [date].

To give background, she flew down to Boston to attend a Red Sox training game in the spring with her father. She chose to ask her contacts whether where they think she might be, and also this played some wonderful use of litotes here:
The majority of your out-of-office emails will go to recipients with whom you communicate regularly. If you are sure that there’s a certain level of familiarity with all of the people that get your auto-reply messages, consider writing something about yourself, a funny note, or a joke. That allows them to develop a more personal relationship with you.
Confirm any expected deliveries will not be left at your door or unattended. Reschedule if necessary.
My OOO replies are relatively boring…usually state if I’m using PTO or at a conference, dates, who to bother in my place, etc.
Every November without fail, when I take a week off for deer season, I start my OOO with “GONE HUNTIN’!”
Thank them for their email. Even though you're not actually responding to the email, you still need to mind your Ps and Qs. After your greeting, add "Thanks for your email."
Further, given how poorly humor — especially sarcastic or snarky, even if mild — translates in text, you're running a moderate risk of pissing someone off through no fault of their own, for no reason other than to indulge yourself.

I saw a version of this on IG that was an old school (paper) OOO from an associate pastor. It has a line like “if this is an emergency and you must speak to someone, Jesus is always available on the mainline.” Too funny.
