It isn’t hard to write an out of office message. And it’s less important than learning how to write a great follow up or understanding what makes a killer subject line. But that’s just the reason why a lot of people usually underestimate what an out of office message can achieve.
A simple greeting like, 'Season's Greetings,' or 'Happy Holidays," is appropriate, followed by, 'I hope the season is treating you well. I wanted to thank you for your business this year and wish you and your team a Happy New Year. ' A sign-off of, 'Regards' or 'Best wishes,' is inclusive and business-friendly. If I got an OoO just to tell me to have a good day, I would find that person and throw water on their computer. They’re obviously not qualified to operate one.
No need to go into great detail that you're traveling to seven different European countries. Simply state whether you're on vacation, at a conference, or on a business trip. This will give the sender a general idea of whether you're be checking your email while you're out. "I'm currently on vacation/at a conference/on a business trip."
The date range you're gone but more importantly . . . The day you will respond. (Pro tip: If you seriously get a ginormous volume of emails when you're away, or you're going to be gone for an extended amount of time, make sure this date is one or two days AFTER you're back from your vacation. Under promise, over deliver, do your laundry.) Alternate contact if there is an emergency. Your phone number (if you absolutely must, but I don't endorse this).

You can clarify that there’s a possibility that you’ll see the email before the return date, but you can’t guarantee it.
Start with a friendly greeting. Skip the "Greetings," "Salutations," "Dear sir/madam." These are far too stuffy and robotic. Instead, start off your response with a simple "Hi" or Hello.
If you work in an international setting, you should eventually prepare an out-of-office message in English to notify people of your absence and tell the recipient who to contact in case they need an immediate response.
Like, I don’t feel confident enough to do it myself, but the OOO writer is probably a known Quirky Person and I admire that to an extent.
As a side note, I put a similar message on my work and cell phones, and once I didn’t change the cell message back for nearly a year. (It was my personal cell number, and only my parents ever left messages.)
