Happy Holidays is used only around Christmas in the USA. Traditionally, it was meant to include both Christmas and New Year's Day. We don't usually say "Happy Holiday" at other times, although there's nothing wrong with saying it.
In the Misc section, you can instruct eDesk to change the status of the message to Waiting or Closed once it has auto-responded, or not to change the status at all. This does not change the status on the marketplace; once the auto-response is sent, the marketplace status will update as normal. Note: The AI Settings tab is not applicable to OOO templates - you can ignore it. All done! The new template is added to the list in Settings → Smart Tools → Templates, and will be sent by eDesk during the specified date/time periods (step 7) for tickets that match the Usage Conditions (step 6). When customers receive automated messages, they have expectations about the wait duration (in terms of number for e.g. 4 mins or 4th position), that can make or break their customer service experience.
If you’re taking a sick leave, make them emphasize by describing how annoying your cold is. If you’re going on an adventure, tell your clients a little bit — just a little bit, don’t be bragging too much — about how excited you are to experience it. This will help build trust with your clients.

Make sure that customers who attempt to contact you know when you expect to be in the office again. Most customers will understand the desire to devote time and energy to the family during the holidays, but they want to know when you'll be back to provide them with your usual excellent customer service.
This used to drive my supervisor crazy, she’d email me “it looks like your OOO is still on.” I had to explain the rationale a few times before she understood.
That 15minute breaktime message screams “past experience with a toxic company” to me.

I say I’m off-duty, or in non-working status, but I come from a DOD background. I no longer like to say out of the office. Unavailable is good too.
A relatively unprofessional one — like mine, for instance — does the opposite: It encourages prospects, recruiters, and potential connections to run in the other direction.
I suppose it’s better than a colleague of mine who’s out of office is always: “I am out of the office until XXX. Please email me if you need assistance.”
I personally always leave my employee as my contact because a) I trust her completely, b) I’d prefer people email her anyway, so this is nice practice, c) My boss is the CEO so please for the love of god don’t email him about your data entry issue, d) the people who are emailing me about sensitive things that my employee shouldn’t know about also know enough to have that discretion.
You can show just how thrilled you are about your vacation while still providing an apology (of sorts... not really).
