Picking the right words for you holiday out-of-office emails can seem like a proper “task”, particularly if you want to be both clear and polite with your message, while sprinkling it with usual phrases about the spirit of holidays. Yes absolutely! I would be really annoyed if someone did that. I would probably have to set a reminder for myself to resend that email (or emails), which is more work for me. If I’m sending the email to several people, I’d also have to ask myself if I should resend it to everyone to follow up, or maybe just wait to send it. This would stress me out that something might slip through the cracks.
Even though you're not actually responding to the email, you still need to mind your Ps and Qs. After your greeting, add "Thanks for your email."

Yes! I would roll my eyes *a*lot* at that message – it comes across as someone taking themselves way too seriously.
A. Facilities and maintenance operations will be very limited on Main Campus during winter break. Therefore, if there is a reason why your work area must remain heated, maintain a certain level of humidity, etc., be sure your department leadership has made arrangements with Facilities ([email protected]) well in advance of winter break so these needs can be met.

My OOO messages are always pretty casual, and the last line in the list of “for X, contact Y” is always something like “for chili recipes, contact Z”.
As to who you choose, you might consider listing a coworker, your supervisor, or an on-call number if available. Just make sure to clear this with whomever you pick as a support person so they’re aware they’re backing up your calls and emails for emergent situations.
Hahahahaha, reminds me of the time the entire giant department (hundreds of people) had to sit through a SLIDE SHOW of a higher up’s trip to Europe, in person. They sent a survey afterwards–thankfully anonymous–and I said it was extremely inappropriate to make us sit through his holiday snaps when most of us can’t go on vacation at all and it was supposed to be a WORK meeting.
There is any number of valid reasons why you might skip on your email inbox for a while. You can be on vacation, feel sick or take a few days off to recharge.
