But traveling for work, then I say “intermittent access” so that I only need to respond to the urgent emails and can ignore everything else for a few days.

We have one key administrative assistant who works part time and I always forget — I appreciate that she sets an OOO every day because her department is very deadline driven and it helps me to remember that if I need something from them, I need to connect with her in the morning. We also have some staff who work the school year calendar and others who are year round; the OOO is so helpful in the summers!
If you’re taking a few days off and want to respond only to urgent emails, this template would be a great fit.
I can see how it would be annoying to some people, but at least it has a bit of personality to it. Maybe I’m just tired of sending so many rote emails in business speak, but I do find it kind of refreshing if only because it’s a different kind of artificiality than I’m used to.

I worked somewhere that required we use them when we left for the day or if we were in meetings all day. It was rather annoying to do every single day.
