I’ve used language like “I’m out of the office at a conference” before and that doesn’t mean I’m not checking email.
I will be out of the office starting (Starting Date) through (End Date) returning(Date of Return).
Also, IMO, it’s putting the burden of knowing and managing your schedule on the other person. You expect them to be paying enough attention to you to remember when you come back and to resend their request. That’s not reasonable.

If you're anything like I am, you probably fall into team two. That doesn't leave a lot of time to get creative. But if you plan ahead, you might be able to craft some hilarity.

In case of pressing issues that need urgent attention, feel free to reach out to [CO-WORKER NAME]. Give them a call on [PHONE NUMBER] or send a message to [CO-WORKER EMAIL].
“Hi, Sorry I missed your call/text. I’m currently out of the office and will not be back until Feb 2. My colleague [name] has agreed to respond on my behalf, so feel free to forward the message to [phone] if it is urgent. You can otherwise expect a response from me once I return. Thanks for understanding.”
Of course, if you’re expecting something (or someone) urgent to pop into your inbox, send them a separate note with your personal email or phone number. Alternatively, you can also just make sure whoever your go-to contact is has that information in case you do need to be reached. Once you handle that, you can do what your out-of-office says you’re doing and actually spend the day recharging.
