You do need a visual voicemail for the last option. That is something that is provided by your cell phone provider and most cell phone provider have it by default. if you don't see it, call them and see if you can add it.

Click the Messages button on your phone. This will dial in to the Spectrum Voice portal. Enter your temporary voicemail password - If you do not have your temporary voicemail password, please see your system administrator.
2. Press the Star or Pound Key. Depending on your carrier, you will likely push one of these two keys next. It's more common to push the star key. When you hear your voicemail start, that's when you should press either the star (*) or the pound (#) key. For AT&T, Sprint, U.S. Cellular, and T-Mobile, press the star (*) key. If you have a visual voicemail applications installed on your Galaxy S21, you can alternately use that app to record and set a greeting instead.

After my custom message has played, the automatic voice kicks back in giving instructions on how to leave a message & access additional options before the tone is sounded. How can I eliminate those automated instructions and proceed directly to the “beep?”

If the you haven't changed your personal greeting, a default system greeting will be played for callers. For example, "Please leave a message for John Smith. After the tone, please record your message. When you finish recording hang-up or press the pound key for more options."
When I record my new voice message I do not have the stop option button and it keeps the existing voice message!! I have an iphone5 and I need to change my voicemail message!! Please help

If you want to change your default greeting: Open the YouMail app and tap the Menu (☰) icon in the top left corner of the screen. Tap on Greetings. Under the default phone/phone number, tap Change. You can either record your own greeting or select an existing one.
